Man Salad: Revisited


I have tried a different variation on this recipe a year or two ago. It has so much manliness sustenance to it, which makes Anthony happy and me content with the low calorie but flavorful ingredients. Anthony hates tomatoes, and yet, I don't hear even one complaint when they are filled with flavorful homemade guacamole. Try it out! It’s a wonderful summer dinner.

Spinach or other favorite leafy greens

1 Chicken Breast, Grilled With Steak Seasoning

On the vine tomatoes (flavorful, perfect size, but priceyso worth it though)

Avocado

Fresh Garlic or Powder: Just a shake

Salt: To Taste

Lime Juice: A Squirt

Cilantro: Tsp of dried or Tsp of Fresh

Jumbo Olives: 4 or 5 per Mouth

Sweet Onions Grilled in Skillet: Lots! MMMM!

Balsamic Vinaigrette

I don’t really use measurements for the guacamole. Everyone has so many preferences and variations when it comes to guacamole. If you like it more basic, keep the garlic out. Or add some diced tomatoes or more spices. Find your nitch and go with it!

Saute sweet onions first. They take the longest to cook. Set aside and cook chicken. Meanwhile, hollow out tomatoes, make sure to get all the seed. In a small bowl smash and mix avocado, garlic, lime juice, cilantro and salt. Fill tomatoes with guacamole. When chicken is done.you know, when the pink is all gone cut into strips. Assembly chicken, olives, tomatoes and onions over your bed of leafy greens and drizzle your favorite balsamic vinaigrette (I use light Newmans Own).

Love the name. I can just picture it. You two sitting down after a hard days work and Anthony saying, "Woman! When are you going to make MY salad!?"
