Chicken & Dumplings


It is cold out. News to anyone in Utah? Yeah...didn't think so. I have never been affected by a cold winter before this year. Normally I am fine with it. I love jacket weather. I don't like to be sweaty and hot so the cold air is good for me. Cold meaning 40's or 50's. Not cold meaning 10 or 15. This is ridiculous to me.

Today I turned the car to warm it up. I got in and noticed the thermometer said 42. I was beyond ecstatic! I was wearing a long sleeve shirt. Because I am so accustomed to spine numbing cold lately I was thrilled to see "a heat wave" had rolled in. Instead of grabbing a coat I drove down the road to meet a friend for lunch. Who needs a coat in 42 degree weather? It's basically spring! Imagine my dread when the thermostat went from 42 to 39, 32, 26, 21 and then came to a stop at 20.

Hey genius, it's warmer in the garage than outside. So no coat for me, and evidently spring it not here yet. Because spring usually starts in January....

After a delightful lunch and grocery shopping and cookie eating I came home and put all of my provisions away. Eventually Anth came home from work. Yeah, poor kid had to work on a Saturday. I warmed up a spot on the couch for him.....even made a butt indent for him.

Dinner time came around and I gave him two choices (No, I don't like to be in control...ever). Choices included Italian stuffed red peppers or chicken and dumplings. He must of had a "I thought it was spring day" as well because without hesistation he requested chicken and dumplings.

It was good. Real good. He even helped while I did some chopping. 

I got the recipe from one of my favorite cook books, "Our Best Bites". I use it often. Lucky for you they have the recipe on their website as well. You should try it. It was just what we needed to warm us up.

That recipe looks better than the one I made. Sorry it is so cold. You should come visit. In the 70's for the next week. :)

Sounds yummy! I love soup on cold winter days. Im so ready for spring :)

Dumpling things have always sounded intimidating to me... Maybe I should get over it and try.
